Set the smoke alarm off twice making grilled cheese, so I put a lid on the pan and it stopped burning
Last Friday I was making grilled cheese in my cast iron and set the smoke alarm off twice because the butter kept burning before the bread got golden. My neighbor who used to cook at a diner in Dayton saw me fanning the alarm and said to just drop a lid on the pan for the first 2 minutes so the cheese melts without scorching the outside. Has anyone else tried the lid trick, or do you just turn the heat way down and wait it out?
The smoke alarm struggle is real, I've done the fan dance with a dish towel more times than I want to admit. That lid trick sounds smart though, gonna have to try it next time before my neighbors start charging me for their burnt toast complaints, get it? Toast?
