She used to tap the loaf like a drum before baking, and I always thought it was some weird ritual, you know? Last week I burned my third consecutive sourdough into a hockey puck, so I called her in a panic. She said, 'Tap the bottom, if it sounds hollow it's done, if it thuds, give it 10 more minutes.' I tried it on a sad, flat ciabatta and it actually worked, no cracked crust, no raw center. It took me 10 years and about 12 ruined loaves to finally listen to a simple sound check. Has anyone else had a parent's random kitchen habit turn out to be the exact fix you needed?
