My $3 dinner plan from last month actually worked for a full week

I was really broke after my car repair, so I bought a 5 pound bag of potatoes, a big onion, and a dozen eggs. I made a big frittata on Monday and ate it for lunch all week with different hot sauces. It saved me from ordering takeout when I was tired after work. Has anyone else done a super cheap 'ingredient week' like this?

Tried that with a bag of rice and a can of black beans. Made a huge pot of rice and beans on Sunday, then changed it up each day. Added salsa one day, fried an egg on top another, mixed in some frozen corn. Felt good to not waste mental energy on food decisions when money was tight.
