Warning: my butter was too cold and I wrecked a whole batch of cookie dough
So last Saturday I was trying to make chocolate chip cookies for my kid's school bake sale and I pulled the butter straight from the fridge like an idiot. I figured room temp was overrated and just went for it with the mixer. Ten minutes in, the dough looked like gravel, just dry clumps rolling around the bowl while the sugar sat there doing nothing. I panicked and added a splash of milk, which made it worse, and then I cracked in an extra egg that turned the whole thing into this sticky paste. My hand mixer started smelling hot so I stopped, wrapped the bowl, and shoved it in the fridge while I googled what went wrong. Turns out cold butter never creams with sugar, you need it soft enough that your finger leaves a dent but not melty. I let the bowl sit out 20 minutes, scraped it back into the mixer, and it came together enough to bake. They spread out flat and crispy but the kids ate them anyway. Now I microwave butter in 5 second bursts and check it with my knuckle, no more guessing. Does anyone else have a trick for saving dough that already went too far?
