Found out my sourdough starter is older than my car and it weirded me out
I was cleaning out my fridge last Sunday and noticed the little jar of starter I got from a friend back in 2019. Did the math and realized this blob of flour and water has been alive longer than my 2021 Honda Civic. Found a blog called The Sourdough Journey that tracks how starters change flavor over years, and apparently after year 3 they settle into a really stable tang. Has anyone else ever stopped to think about how old their starter actually is?

Don't really see the big deal honestly. My starter is from 2018 and I barely think about it. It's just fermented flour, not a family heirloom.

Wait, is keeping a starter for 6 years really no big deal? I mean, it's cool it still works for you, but people act like theirs is a museum piece or something. It's literally just flour and water that you fed yesterday. Not some ancient relic. I get that people get attached, but it's not like you're preserving the Holy Grail. Let's be real, you can make a new one in a week and it'll taste just as good.
