I killed two jars of flour and water over 11 days because my kitchen sits at 63 degrees overnight and I never checked it. I kept feeding on schedule and wondering why nothing doubled, until my neighbor Dana asked one simple question about the temp. I dropped a cheap thermometer into the jar, saw 64, and moved the whole thing to the top of the fridge where it holds 76. First real rise happened 14 hours later. Has anyone else had a starter come back to life just from a warmer spot, or do you use a proofing box instead?
