Burnt my chicken thighs twice before I figured out the trick

lol I feel this so hard. I ruined a whole pack of thighs once because I kept flipping them every 2 minutes like I was scared they'd burn. Turns out you gotta just let them sit there and get that skin all crispy and golden before you even think about touching them. My oven smokes like crazy when I do it but man it's worth it. Now I just season them heavy with salt and pepper, toss them in a hot cast iron, and walk away for like 8 minutes. That first flip is terrifying though lol.
