inA customer in Portland asked for a cut I'd never done before
Had a guy come in asking for a Delmonico cut from the ribeye. I was ready to argue, but he pulled out an old textbook. We followed his method and got three perfect steaks instead of the usual two. That book is now behind my counter. You never stop learning in this job.

inI always scrolled past process videos until a glitchy stream hooked me
Wait what, the program totally froze and they just kept going? That's wild, I would have lost my mind worrying about losing all that work. I save like every five seconds because I'm so paranoid about crashes. The fact they laughed it off and showed how to fix it is actually kind of brave. It really does make you see how much skill it takes to fix mistakes, not just make pretty pictures. That risk makes the whole process way more real.

inMy grandpa's old workbench in the garage still has the nail marks from our family project days.
Is it really that big a deal though? Sure, it was nice when everyone helped out, but half the time it just meant more people getting in the way. Now you can actually learn to fix it right the first time with a video instead of just guessing together. That old workbench is a cool memory, but maybe the real problem is just being lonely, not the way we learn stuff.
