Finally got my pour-over timing down to 2:30 flat after a month of messing it up. Everyone at my local shop keeps rushing it.

Man I hear you on that! I actually read somewhere that most people are WAY too aggressive with their pour-over timing. I remember @quinn377 talking about how they used to do 3 minutes too. Its like we all get brainwashed into thinking longer must be better. I switched to a 2:45 bloom with a 30 second pour after seeing a video from some Japanese coffee guy and it completely changed my mornings. The difference between 2:30 and 3 minutes is honestly night and day depending on the bean.

Used to be a big believer in the 3 minute brew time myself. Watching a barista at a good shop changed my mind, they pulled a fantastic cup right at 2:30. Made me realize I was over-extracting my own coffee for years. Getting that timing right really does make a smoother, less bitter drink.

Totally had the same thing happen. I was stuck on a 4 minute French press brew because some old guide said so. My coffee always tasted kinda muddy. Cut it down to 3:15 after watching a friend who really knows his stuff, and the difference was crazy. It went from a bitter sludge to something actually bright and clean. Just shows how a few seconds can wreck a good bean.
