That staircase landing took me 8 hours when I figured it would be a 3 hour job. Where do you draw the line between redoing something vs calling it good enough?

I'm working on this split level house remodel in Portland and hit the landing where the stairs turn. The stringer math was fine on paper but the actual fit against the old plaster walls was off by like half an inch in some spots. I spent way too long shimming and scribing to get it perfect. My partner said I should have just left a small gap and covered it with trim but idk, that feels hacky to me. Where do you guys set the bar for stuff like this? Is a little gap that gets covered ok or do you keep fighting it until its dead on?

Honestly, how much of that half inch gap is in a spot where trim actually hides it? Ive done both routes and my rule is if the gap is under a quarter inch and getting covered by shoe molding or quarter round, its good enough. But if that landing is in a spot where light hits it funny or you tripped on it twice already, keep fighting. Trust your gut on this one, nobody is gonna know about the shims except you.
