My lab tech said my prints looked like soup and they were right

After 4 rolls of Portra came back looking muddy and flat, the guy at the camera shop in Austin told me I was overexposing by a full stop because I trusted the meter on my old Pentax, so I started bracketing everything and now I actually get skin tones instead of orange mush, anyone else had to unlearn what their camera told them?
