I swore off baking bread by feel until my oven died mid-loaf in Phoenix
Last month my oven quit on me halfway through a batch of sourdough, right when the power blinked out for about 2 hours. I had a dough ball sitting there getting cold and I almost tossed it, but my neighbor said to just wrap it in a towel and let it sit on the counter overnight. Next morning it had puffed up more than any batch I ever made with timers and thermometers. So I baked it in a cast iron pan on the grill outside and the crust came out better than my usual setup. Now I keep a little notebook by the stove and write down the room temp and how the dough looks instead of just setting a clock. I mean, I still use the oven when it works, but has anyone else had a power outage teach them to trust their hands more?
