The $15 bag of frozen chicken wings beats fresh ones every time in the air fryer
I tested this after reading a post on Serious Eats where they broke down the science. Frozen wings come out way crispier because the ice crystals create more surface texture. Fresh ones always end up a little soggy no matter what I try. Has anyone else noticed this or am I just bad at drying them off?

Buddy of mine tried this exact thing last week. He had a bag of frozen wings from Costco and a fresh pack from the butcher, did them side by side in the same air fryer basket. The frozen ones came out like they were from a restaurant, all bumpy and crunchy, while the fresh ones just looked sad and pale even after extra time. He said the fresh ones tasted fine but the texture was nowhere close.
