Old lady at the farmer's market taught me her chicken trick
I was buying some chicken thighs at the Saturday market in Raleigh last month and this older woman next to me started talking about air fryers. She said she coats her thighs in a mix of baking powder and salt before cooking them at 380 for 18 minutes. Tried it that night and the skin came out super crispy like it was fried. Has anyone else tried something like that with baking powder?

Damn that's a good trick. Bet it works same way for chicken wings if you flip em halfway through.

Three years ago a welder told me to put baking soda in my coffee to cut the acid, and that got me thinking. Every old person I meet has some weird kitchen hack that actually works, like they all went through the same secret training or something. The baking powder chicken thing is real though, I've done wings at 375 for 20 minutes with a flip and they crunched up like a dream. You ever notice how these little tricks spread through people just talking at markets and diners, not through any recipe blog?
